Easy paleo snack recipe full of dates, nuts and clean protein for a snack with a well-rounded macro profile. Great as a pre-workout snack or in-between meals.

Ingredients

  • 8 large medjool dates, pitted
  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1 scoop (28 grams) Prime Protein
  • 3 Tablespoons unsweetened shredded coconut
  • 1 teaspoon virgin coconut oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Optional: Additional coconut shreds to roll the bites in (approximately 3 tablespoons); liquid stevia

Instructions

  • Combine all ingredients into a food processor and pulse and/or process until you have a fine texture. Test for flavor and sweetness. (See Notes)
  • Measure out the bites by tablespoon (creates 15) or by 1.5 tablespoons (creates 10) and roll into balls
  • Roll the balls in the additional coconut shreds

Notes

I used unflavored prime protein powder because I think the sweetness of the dates is enough. However, if you prefer a slightly sweeter flavor while keeping the calories/carbs the same, you can easily substitute the unflavored protein with a flavored version. Or you can add a few drops of good quality liquid stevia.
