Roasted Tomatillo Salsa (Salsa Verde) and a Giveaway

This post is SO long overdue.

There is an explanation for my seeming fall into slackerdom. Did you know I have a full-time job with a two hour per day (minimum) commute?! (A total of over 420 miles per week driving – thank God for my hybrid!). Oh yes, and a husband…and a couple of kids… and a house and, and…. Then there’s the ole perfectionism which prevents me from posting until I labor over everything for a good while.

Being able to be a full-time blogger would be great and, who knows, maybe one day that will happen. But, alas, blogging is not going to replace my current day job anytime soon. In the meantime, if I’m going to post more often I’ll need to get more efficient with recipe testing and photo editing and be a little less perfectionistic about it all.

This Roasted Tomatillo Salsa is really easy and packs a punch depending on how spicy you want to make it. Roasting the veggies adds to the depth of flavor and is similar to the Roasted Tomatillo Peach Salsa from a few weeks ago. I used it to make Paleo Chicken Enchiladas Verdes which is yet another post in my queue that I am hoping to finish soon!

Paleo Roasted Tomatillo Salsa

Roasted Tomatillo Salsa (Salsa Verde)

Ingredients

  • 10 medium tomatillos (approximately 2 lbs)
  • 2 jalapeño peppers
  • 2 serrano chiles
  • 1 medium-small poblano pepper
  • 4 cloves garlic
  • 1/2 small white onion
  • 1/2 cup chopped cilantro (about half a “bunch”)
  • 2 tablespoons lime juice
  • 1 teaspoon salt

Instructions

  1. Place the veggies (except the onion)- tomatillos, jalapeños, serranos, poblano and garlic – onto a baking sheet covered in aluminum foil.
  2. Roast under a hot broiler about 10 minutes per side (or until browned/slightly-blackened in spots)
  3. Remove from the oven and allow to cool
  4. Place the onion, cilantro, lime juice and salt into a food processor and pulse a few times.
  5. For a very hot salsa you can simply add the roasted veggies to the food processor with the other ingredients and continue to process until you have reached the desired consistency.
  6. If you prefer a mild salsa you should cut open the peppers and remove the seeds and the membrane surrounding the seeds. When I make it I leave in about half the seeds and membranes and it is on the medium hot side.

    One of the best pieces of advice I got was to eat more whole foods. That lead me to paleo, and then led me to whole30. After doing whole30 I discovered exactly what I was intolerant too, and that I had a huge sugar addiction. It’s easier if I stay paleo now.

The best advice has been to really look at the foods I eat and how they work for my body and my goals and not eat fake processed foods or foods packaged….I love to cook and so I do make my own all natural protein power bars and treats and I love to enjoy ALL kinds’ve fresh foods I make. Thankful for good health and that I am continuing to evolve in my understanding of food and how it nourishes my body

    When I’m craving something, say some beets, it’s my bodies way of letting me know there’s something in those beets that I NEED! When I pay attention, I feel so much better!!

  14. Best piece of health advise I ever received…and live by (!) has already been said many times…eat real food! When I stopped eating processed food and started cooking from scratch my health improved almost instantly! Sometimes things are too hectic and it’s easier to just open a package, but the trade off in health isn’t worth it, as far as I’m concerned.

  15. Healthy tip: Replace pasta with raw shredded baby spinach. You can still enjoy delicious “pasta” dishes, but without the empty calories of the pasta. And let’s be real,… the SAUCE is the best part of the pasta dish anyway 🙂

  16. I think the best advice I’ve gotten wasn’t really “given” to me, so much as I read it and decided to give it a try – this was about going grain free. It’s not the easiest thing in the world to do, true – but probably the best I’ve felt since I had gastric bypass surgery years ago.

  17. For a sore throat gargle a heaping tbs of good quality salt (like himalayan or celtic) and a heaping tsp of ground tumeric (or fresh grated if you have it) dissolved in very warm water, maybe a half cup or so. It takes my sore throat away every time. Like a miracle.

  27. The best health advice I have received is to do the best you can do with what is available. I follow a strict grain free diet due to Crohn’s but sometimes I make bad choices and pay for it. I try to stay away from the guilt associated with not eating perfect all the time. I do the best I can and just try to roll with the punches.

  31. The best way to stay on track is to plan your meals. I usually cook a few meals on the weekend for lunches and dinners. With work and kids activities I like to have some meals ready in case I don’t have the time to cook or hit the grocery store.

  42. Educate yourself, set goals, and then try your best. No one is perfect and jumping in head first to clean eating is hard. Don’t beat yourself up if you mess up. Regain your focus and try again. Focus on tiny habits & let yourself celebrate when you’re successful. Gain confidence and then go for your bigger goals.

  45. Raw honey. Know your beekeeper. Grass fed beef and butter. Farmers markets with farmers you know. Goats milk is a special treat. Bone broth daily. Also use a fat flush mix of water, grapefruit, cucumber, and mint.

  49. Just cut out the soy, dairy and wheat for 3 weeks and see how you feel. I was skeptical, but it was only for 3 weeks. Funny thing is, I felt so good after the 3 weeks were up that I didn’t want to re-introduce those foods back in again. 🙂

  50. Just discovered your blog and looking forward to all the Paleo support I can get. My best advice is to plan ahead. Take time to plan meals and on-the-go snacks and prep them on the weekend or whenever you get a chance. Prepare several proteins, etc. ahead of time and store in your freezer or fridge for busy weekday lunches, etc. This REALLY helps me to stay on track and avoid fast food and binges out of hunger. Ditto with workouts. Plan them into your schedule.

  51. The best advice I have gotten is to prepare and make a plan. With my family’s busy lifestyle, planning and prepping lunches, snacks, meals ahead of time helps us stay on track and stay OUT of the drive-thru!

  63. Don’t be afraid to eat nuts– they are good for you and also help keep the cravings away! Also, drink lots of water and try to stay away from caffeine. As much as it hurts to say that, I’ve actually had much more energy when I limit my coffee to twice a week as opposed to every morning! Plus it saves me money on those pesky little keurig cups.

  67. Reading Practical Paleo would be my advice to anyone interested in a healthy lifestyle. I love that she addresses different needs, such as autoimmune disease or athletic performance, so her book is useful for every member of my family. I’d love another copy to share with my adult children 🙂 I have to avoid nightshades, so no salsa with tomatoes or peppers for me, unfortunately. But it sure looks good!

  70. For many eating healthy may be a fad but for my family it is our way of life. I just wish it didn’t need to take a medical diagnosis for my family to choose to eat healthy.   76. The best health advice I have had is to take care of your GI system. 80% of your immune system is in your gut. If you don’t have a healthy gut you have a weakened immune system and you may not metabolize nutrients well. Take probiotics, eat hormone and antibiotic free meats, eat dairy free foods, eat fermented foods, drink aloe vera juice and eat raw fruits and vegetables.

  77. If you think something is wrong, with you or your child, there probably is something wrong. Go to a holistic physician or naturopath to get to the root of the problem. Don’t just treat symptoms, as how most allopathic doctors do.
