For some reason, the idea of making something called raw cashew cream makes me feel very “earthy-crunchy”. (Not that there’s anything wrong with that!) Maybe it’s because there is a certain stigma associated with the raw foods and vegan movements and raw cashew cream falls into their realm(s). It’s unfortunate, really, because there is so much innovation going on there. We may depart ways when it comes to certain foods – definitely soy products for one. But I love finding out all the different techniques other cooks use to find ways around dietary restrictions. There’s a lot of creativity, not to mention some tasty and nutritious food as well.

Cashew cream is a rich creamy base used in many dairy-free, vegan foods. Raw cashews are essential in this recipe. This is because cashews derive most of their flavor from the roasting process. Without roasting, raw cashews have no real flavor of their own which is why they are ideal to create this dairy-free cream. If you follow a paleo lifestyle then raw cashew cream is a great option for dairy-free recipes.

Many of us started a month of Strict Paleo eating (aka Whole30) recently. This recipe for Prosciutto-Wrapped Asparagus helped our family get through day one and we hope it will find its way into one of your meals soon. One thing is clear, following a paleo way of eating is not going to mean deprivation. Just look at our breakfast. I mean, really. This is good stuff.

Before getting to the recipe I wanted to mention G’s last post. In it, my husband wrote about his fall off the “paleo wagon”. In order to enter his giveaway he asked that readers include a comment on one of their New Year’s resolutions. It’s been really interesting reading the comments and I know many of you are excited, like we are, to start with a clean slate in the New Year. Several people noted their resistance to making “resolutions” feeling this could be a set-up for failure. Instead, there are lots of people who set “goals” which is probably a better way to look at it. No matter what time of year, it’s always a good idea to strive for health and wellness.

Here are some highlights of comments we’ve seen so far:

G’s New Year’s Paleo Resolution plus a Giveaway

About two years ago, my wife Lea started “eating Paleo” in an effort to alleviate some health-related issues which she believed were possibly caused by certain kinds of food, like gluten. Partly to be supportive, and partly because she does most of the shopping and all of the cooking, I went along. I mean, really…what choice did I have?

To my surprise (admittedly, I was skeptical), the new way of eating proved wildly successful for her and for myself. When combined with a regular regimen of Yoga, walking, and occasional sprinting, I shed the pounds quickly! Without much real effort and a lot of tasty meals, I was able to see a “1” followed by a “6” on my bathroom scale for the first time since I was in high school over two decades earlier.

I was very proud of myself; I looked good, and I felt great. I celebrated my discipline at being able to cut out sweets and bread, and to eat well at work as well as at home. My wife applauded my resolve. Things were going great! Until…

The fall off the “paleo wagon”

…Something happened. I don’t know when, but it happened just the same. Slowly but surely, the carbs returned – a little bread here, a slice of pizza there. And of course, there was the beer. As you may have noticed from some of my beer reviews, I love the stuff. So…bread, pizza, beer…and two years later, it’s all back, and then some.

PALEO RESOLUTION

Don’t get me wrong, though. I’m not fat. I don’t think I’m even chubby…but I am overweight, and I don’t like it. So, in an attempt to regain my previously trim physique, I am willfully joining my wife on the Strictly Paleo Plan for the month of January 2013. I’m hoping to not only lose weight and get back in shape, but to re-establish those good food and exercise habits that worked so well when we first “went Paleo” back in 2010.

Basic Paleo Egg Muffins

Well, I managed to survive my first week back at work. Thank you to everyone who wished me well and offered a prayer. I really appreciate it. Making my transition a little easier was my pleasant surprise at the windowed office with a nice view. Yea trees and grass!

The drive is pretty substantial and it’s a good thing I drive a hybrid because otherwise a big chunk of my paycheck would go just for gas! The longish drive gives me the opportunity to listen to audiobooks again. This something I did years ago and really enjoy because it’s a great way to multitask. (I get my books either from the library or from www.audible.com) Right now I am reading Anna Karenina by Leo Tolstoy. It’s one of those classic novels that I somehow managed to NOT read during school years. There’s a movie coming out in November so I figure now is the time to do it. Hopefully, the 38 hours (yes, 38 hours!) of audio will make my commute more tolerable.

One of the things I have noticed about being back at work is how awkward it feels to sit for most of the day. I SIT in my car then SIT at my desk for hours then walk to lunch or to a printer occasionally but mostly….I SIT. For the last two plus years I have been active from sun up to sundown. Aside from sitting here at my computer writing or editing photos, I am almost always standing or walking. So this is going to take some getting used to. Hmm. Maybe a standup desk is in order….

Here’s a shot of my feet from Saturday morning. It felt so wonderful to get back into my Lululemon leggings and Vibrams after a week of high heels and business suits. Aaah, heavenly comfort on a frosty morning.

After this photo was taken I popped down to the local farmer’s market and found a few lovely ingredients for paleo breakfast. The following recipe for basic paleo egg muffins comes from those ingredients and my need to make breakfast fast and easy now that I’m more pressed for time. It’s one of those recipes that has the potential to get really fancy with the addition of various spices and veggies. I’m keeping it simple because this is the way my kids seem to like it best.

You can make these egg muffins ahead of time then reheat in the morning for a quick meal at home or on the go. All you need is a pound of (ideally organic pasture-raised) pork breakfast sausage and a dozen eggs. With just those ingredients and a little oil, salt and pepper you’ve got breakfast – double it and you have enough for a few days.

Asian-Style Beef Short Ribs (Paleo)

paleo asian beef short ribsBeef Shorts Ribs is/are one of those foods I mostly avoided prior to “going paleo”. They just seemed way too fatty to be a reasonable option for someone concerned with eating “healthy.” Or so I thought. I do remember being on vacation in New Orleans years ago and dining at Emeril’s Delmonico restaurant. We were on vacation so I was going to go a little wild. Okay, when talking about vacationing in New Orleans and going “wild” I should probably qualify that by saying my going wild amounted to eating a huge plate of beef short ribs and polenta. I was going craaaaazy I tell you!

Anyway, the meal was so fantastic I still remember it fondly not only because of the splurge on beef ribs but the accompanying polenta which was beyond delicious. For years I wondered what in the world could have been in that recipe to make it so amazing. Well, I’m pretty sure I’ve figured it out and….it is beef fat (aka tallow). Duh! That exquisite polenta was soaked in tallow from the short ribs. So imagine my delight when I read information like this telling the truth about red meat.

Of course, we know now that grass-fed/finished beef is higher in Omega-3 fats than conventional beef. So I do recommend when eating fatty cuts you use grass-fed beef. Although I must confess I did not follow that advice for this recipe simply because I did not have access to a higher quality product. Here’s a shot of the ribs I used.

Instead of making polenta to go along with the short ribs (too much corn) I decided to take an asian path. Asian food is one of my favorites. Never having been able to achieve results at home that matched the food in good asian restaurants, it has usually been my preferred cuisine when eating out. The problem is I have celiac disease and am intolerant to all kinds of weird ingredients. If you have ever taken a stroll down the asian food aisle at the grocery store and peeked at the labels of some of the packaged food you will understand the problem. To get my beef AND asian food “fix” I came up with this recipe that avoids troublesome ingredients. If you are following an “autoimmune paleo protocol”** this recipe will work for you. The only ingredient that might be considered unusual is coconut aminos. Coconut aminos is a product derived from coconut that tastes like soy sauce but does not contain wheat (gluten) or soy.

When I was putting this post together I looked at the photos on my camera and had to laugh at what I saw. There were photos of beef short ribs then photos of flowers, then photos of more ingredients for asian-style beef short ribs, then vegetables from the garden and back to food and on and on. I just bought a new camera lens and I’ve been having fun practicing with it. But this is only part of the explanation. The truth is, flitting from activity to activity is pretty much standard operating procedure for me. Hmm, wonder what that means…Oh look, a spider!

Wild Salmon with Lemon Dill Sauce

From what I have heard, many people have chosen August as a month to follow the “Whole 30″. For those of you who have never heard of it, Whole 30 is essentially a strict version of the paleo diet similar to what I wrote about here. For one solid month there’s no wiggle room with sugar and no “cheats” with grains, legumes or dairy, among other things. It is a pretty drastic elimination diet but can do wonders for health. It is an absolute necessity if you suspect you have food intolerances. But it can also serve as a “reboot” for those of us who have already completed a 30 day (minimum) elimination diet in the past.

I already eat a fairly strict version of the paleo diet most of the time, but I do occasionally indulge in full fat (preferably pastured) dairy and some sugar in the form of things like maple syrup or honey. But in honor of folks following “Strictly Paleo” or “Whole 30” plans this month, I wanted to post a recipe that will fit right in.

Wild Salmon with Lemon Dill Sauce is easy, takes just a few minutes, will provide plenty of protein and Omega-3s and is also approved for those of you following an autoimmune paleo protocol. This means you are not eating nuts, eggs, plants in the nightshades family and certain types of peppers. (See my food matrix)

Even though I used pastured butter when I made this salmon dish recently (as shown in the photos) you can easily substitute ghee* or even olive oil. (Check out this post for an easy way to make ghee in the oven.)

Heirloom Tomato Salad with Garlic Scape and Kale Dressing

If I were a better gardener and lived a little farther (further?) south I MIGHT have grown these heirloom tomatoes myself.

But I’m not and I don’t and I didn’t.

So, instead, what we have here are heirlooms I found at a standard grocery store and Costco. But let’s not turn up our noses shall we? Look how gorgeous.

The whole time I was taking these photographs I was pondering what to do with the heirloom tomatoes. We needed a side dish to go with our roasted chicken dinner. Tomato, cucumber and avocado salads are always a big hit around our house so I thought that might be nice.

It will go great with those ribs our minister will be cooking up!
