In spite of the price, I have been buying them occasionally because I want to make my Sweet Pea happy. I am often incapable of resisting his charms. (Could you resist this face?)In order to save some money I finally decided to try making them for myself. I’m happy to report it turned out great. You may have already seen my post on Homemade Coconut Cream Pie Larabar which is another one of our favorites. This recipe is similarly simple. It contains only 3-4 ingredients and is very quick, easy and delicious. These bonbons are great as a snack or treat and make a sophisticated dessert offering for a party.

Apple Cider Paleo Donuts

This recipe for apple cider paleo donuts is inspired by the amazing apple orchards in my adopted state of New Jersey. Apple cider donuts are commonly found at farm stands, primarily in the autumn, and usually accompanied by glasses of hot apple cider. Contrary to its image, New Jersey retains its rural and agricultural flavor throughout much of the state. (It is known as “The Garden State” after all.) The apple industry here is vibrant and farms have survived development and other economic pressures by promoting orchards as educational and recreational experiences. Consumers contribute to the preservation of the farming heritage by patronizing local farms. Farms in turn have used festivals, school tours, u-pick operations along with roadside retail to survive and thrive by meeting consumer demands. We enjoy patronizing local farms and have always looked forward to indulging in cider donuts when visiting them. This recipe for cider paleo donuts allows us to enjoy this treat while sticking with our paleo diet.

My husband was initially shocked at the sight of my newly purchased mini-donut maker. He thought I had really gone off the deep end. (Oh, he of little faith!) But in spite of his skepticism, these donuts are grain-free, gluten-free, casein-free, soy free and contain only natural sugars. So I consider them a bonafide paleo treat. And these paleo donuts go great with some eggs and coffee at breakfast. You can also serve them as an after school snack. (Something my boys love.) They are fairly quick and easy to make – you don’t need to drag out your stand mixer. And the $20 for the mini-donut maker seems like a worth while investment.paleo donut collage

Paleo Pecan Pie / Tart

paleo pecan pie tartTexas has a robust pecan industry and, not surprisingly, pecan pie is very popular there. Not far from my hometown is the famous Collin Street Bakery in Corsicana, Texas. They have been using Texas pecans since 1896 in their fruitcakes, pecan cakes and pecan pies that ship all over the world. When I was growing up there, pecan trees, which are native to Texas, were in my front yard. I still remember the little old man coming over and using a “pecan picker upper” to harvest some from under our trees.  A few days later he would show up at our doorstep with a homemade pecan pie just for us!  It was his way of saying thanks and the gesture was much appreciated.

Unfortunately, celiac disease or gluten intolerance means having to avoid gluten in a pecan pie even if it comes from a famous bakery, a nice neighbor or a well-meaning host at a party. If you want a standard pecan pie there are about a zillion recipes in cookbooks and online. But almost every one of them will have a wheat flour crust or, minimally, will be chock full of sugar, sugar and more sugar.  “Low carb” recipes often have tons of artificial ingredients that make me think “why bother?”  This recipe is different.  It is not only gluten-free but also takes into account my desire to stay as close to paleo as possible. So gone is the corn syrup, brown sugar and processed white sugar. The filling is sweetened only by dates, applesauce, pure maple syrup and a little molasses. Oh and there’s a bit of rum too. But that’s optional. Sort of.

Chocolate Paleo Snack Cake:: PaleoSpirit.comChocolate Paleo Snack Cake is fast becoming my boys’ favorite snack during our after school “tea time”. Before moving on to homework or other activities after school we take a few minutes for tea and a snack and share with each other about our day. I have overheard my sons proudly telling their neighborhood friends they can’t come out to play until after tea time.
