It started snowing early on Saturday morning, far earlier than expected. The flakes were the big, fluffy kind you see when the air temperature is not terribly frigid. We were inclined to stay inside and enjoy the view from our warm home. But, unfortunately, we were out of coffee and there was grocery shopping to be done. So, I grabbed my husband, Gavin, and we trekked to the store to stock up on supplies. In a state like New Jersey where snow is no stranger you would think people would know not to panic-buy. But judging by the bustling grocery store, that is not the case.

After deftly battling the crowds, and stocking up on necessities, we ventured to Starbucks for a pound of their Christmas Blend coffee. I am no stranger to Starbucks and may have mentioned before my penchant for the Grande Americano with Heavy Whipping Cream. But each time I’ve been in the store in recent weeks the seasonally available Starbucks Cranberry Bliss Bar has been sweetly calling my name. I resist. In fact, having celiac disease means there’s really no way I even seriously entertain the notion of eating one of these beauties. It’s sad, actually.

But I got a bright idea! I would have Gavin eat one and describe, in detail, what he tasted so I could make a gluten-free, paleo-friendly version of the Cranberry Bliss Bars. And that is exactly what we did. He ate it a little too quickly if you ask me. And in fact I got a little snippy telling him to slow down, that the ONLY reason he was eating it was because he was on a mission – a mission of mercy to those of us longing for, yes, CRAVING, one of these things!

At that point all I heard was, “cream cheese…lemon…ginger…*garble* some kind of chunky white stuff, oh, that’s probably white chocolate..boy, that was good!” And with that, the cranberry bliss bar was history. Gee, thanks for that in-depth analysis, honey.

So let’s go for it. This recipe for Paleo Cranberry Bliss Bars is gluten-free, grain-free, dairy-free and (mostly) free of refined sugars. The dried cranberries will almost certainly contain sugar. So if you are just absolutely opposed to it then this recipe is not for you. But compared to the original recipe, and most other treats you will be offered this holiday season, this recipe has far less sugar and still manages to be moist and delicious.

Just down the street from our home lies a lovely, family-owned Christmas Tree farm. In spite of this, we have opted for an artificial tree the last few years primarily because of my son’s tree allergies. But, I will admit, another factor is the artificial tree is “pre-lit”. Yes, the convenience trumped the natural beauty of the real thing – at least until now. This year we decided to take a chance with the allergies and opt for the full cut-your-own-Christmas-Tree experience.

His little tree reminded us of Charlie Brown’s Christmas Tree.  We ultimately chose a larger tree and the boys took turns (with close supervision!) cutting it down.

We really had fun with cutting our own Christmas tree. It looks and smells great and I’m pretty sure we will be tossing out the artificial tree and going natural from now on.

The experience reminded me of a poem by e.e. cummings I memorized for seventh grade English class:

Paleo Thanksgiving Recipes

Thanksgiving is just a few days away but preparations are already beginning. There’s a lot of grocery shopping yet to go and I’m never sure how I will get everything done in time. Just recently we were rather touched when our youngest son, Nathaniel, declared Thanksgiving to be his favorite holiday. That’s a sophisticated choice, if you ask me, given the other candy and gift-laden holidays. But Nathaniel is one of those sensitive and sentimental souls and his choice made me ponder why Thanksgiving has such an attraction.

Well, first of all there is food and we all love food. But one of the reasons we especially look forward to the Thanksgiving holiday is the time with family. At Thanksgiving we focus more on family time and less on the hustle and bustle of shopping for gifts. It is also a wonderful reminder of how blessed we are and an opportunity to give thanks to God.

We can take inspiration from some great thinkers who have pondered the wisdom of gratitude:

Today I’m sharing the Paleo Thanksgiving Recipes we will be having this year. There are tons of paleo Thanksgiving roundup posts around lately and they are great for seeing a lot of recipe options in one place and finding new bloggers to follow. The only trouble for me is I sometimes get a bit overwhelmed with the choices. So to keep things simple I am just posting recipes that would make up one totally wonderful paleo thanksgiving feast. It’s not to say you have to make ALL these recipes to have a great holiday meal – but they pretty much cover the gamut of traditional Thanksgiving recipes. Many of these are my own time-tested and beloved recipes but a few are finds from around the internet that look and sound delicious. I can’t wait to give the new recipes a try.

This post is SO long overdue.

There is an explanation for my seeming fall into slackerdom. Did you know I have a full-time job with a two hour per day (minimum) commute?! (A total of over 420 miles per week driving – thank God for my hybrid!). Oh yes, and a husband…and a couple of kids… and a house and, and…. Then there’s the ole perfectionism which prevents me from posting until I labor over everything for a good while.

Being able to be a full-time blogger would be great and, who knows, maybe one day that will happen. But, alas, blogging is not going to replace my current day job anytime soon. In the meantime, if I’m going to post more often I’ll need to get more efficient with recipe testing and photo editing and be a little less perfectionistic about it all.

This Roasted Tomatillo Salsa is really easy and packs a punch depending on how spicy you want to make it. Roasting the veggies adds to the depth of flavor and is similar to the Roasted Tomatillo Peach Salsa from a few weeks ago. I used it to make Paleo Chicken Enchiladas Verdes which is yet another post in my queue that I am hoping to finish soon!

In spite of growing up in Texas where tomatillos were plentiful, I do not recall ever eating a fresh one. I feel a little lied to! No one told me tomatillos are delicious raw. Our CSA grows them so this was the first year we had several gorgeous, green gems lying around just calling out to be turned into salsa….or eaten fresh?

The salsa is the best I have ever made and I am a bit of a salsa snob. The combination of roasted and fresh flavors is delicious and the smooth and chunky texture makes it perfect as a dip or a relish to go on meat dishes.

We made the salsa on a weekend that included a bit of outdoor fun. The nearby Delaware Water Gap area is a gorgeous place that is only a bit more than an hour west of New York City. The funny thing is I read the “Paleo Indians” along with the Lenape tribe used to roam these hills. How appropriate! We frolicked in the river that included a few mossy rocks from which we jumped into the cool waters of the deep pool.

Later we hiked up the mountain and enjoyed the beautiful views. I love this photo of my oldest son, Benjamin, because just a couple of days after our hike he told me of his intention to become a Christian. His faith and courage are inspiring and I’m so proud of his decision.

We have been on a peach kick lately. In addition to this Roasted Peach and Lemon Thyme Paleo Ice Cream, there’s been Peach Breakfast Cake, Roasted Tomatillo Peach Salsa and Vanilla Peach Freezer Jam. The peach tree in our backyard has been very “fruitful” this year and we have taken full advantage.

Not being professional fruit pickers we had to resort to some primitive methods of reaching the peaches high in the tree. Behold the “Lacrosse stick-broom handle-peach picker”.

In spite of our primitive methods we were pretty pleased with the harvest. Although to make all these recipes we definitely made use of farm stand peaches this summer. Yellow peaches have always been my favorite but white peaches have their own beauty.

In order to make the ice cream I roasted a few of these beauties. Before roasting the peaches I cut them up and placed them, skin on, in a baking dish, drizzled honey on them and roasted the peaches until they were soft and the skin peeled right off. The house smelled absolutely heavenly.

While the peaches were roasting I harvested the Lemon Thyme from our garden. It has an unusual flavor – a variation of regular thyme but, as you can imagine, with a strong lemony scent. The leaves are tinted with golden edges setting it apart from its more ordinary cousin.

When making the coconut milk ice cream I decided to use egg yolks to create more of a custard for a creamier, less icy end product. The hot coconut milk was infused with the lemon thyme goodness and honey, then used to temper the eggs to create the custard.

The soft roasted peaches were relieved of their skins and smashed with a fork then added to the lemon thyme infused custard. The peach and coconut milk custard mixture then was added to our ice cream maker and processed until we had a thick, peachy summer treat. We lined a bread pan with parchment and froze the ice cream for a few hours before serving.

Paleo Spirit in Brooklyn: Botanic Garden, Fatty ‘Cue and OddFellows

It’s been decided. Brooklyn is where I want to live.

Of course, I also want to live in Costa Rica, Tuscany and New Zealand. Well, then there’s Hawaii, Sardinia and Austin. Okay, so maybe I’m a little fickle when it comes to places I have visited or wish to visit. But seriously, Brooklyn does have its charms. Having lived in the New York City area for many years it is a bit of a travesty we had never visited Brooklyn. So one Saturday in August we ventured to Brooklyn to take in a few sites and enjoy some tasty (hopefully paleo-friendly food). We tackled the Brooklyn Botanic Garden and a couple of establishments serving cutting edge, high-quality eats: Fatty ‘Cue and OddFellows Ice Cream Co.

The gardens were recommended by an artist friend, Graydon Parrish, who lived in Brooklyn during his early art-school days. He knows I like flowers and did not steer me wrong because the gardens are absolutely stunning.

The BBG has a lot of educational sections for kids. I love how it provides an area for city kids to learn a lot about gardening and just have plain old fun interacting with nature.
